Happy New Year!!!
Yesterday, my doctor told me that my new scans look great! I have a video chat with him next week for the full info.
I don’t make New Year resolutions but I will tell you about a change I’m going to make. I read a recent article in the New York Times about dairy cows – I did not know any of it – and I have decided to stop drinking milk (I’m a very big milk drinker). I have a gallon in my refrigerator now and I will finish it (damage already done) but every time I pour it I think about what I read. Cows are docile, sweet animals. I’ve met people who have worked with them and they all love them.
In another life, I would have land and animals: cows, goats, and donkeys. I met a donkey a few years ago and fell head over heels in love – the sweetest donkey. I lived near a place with goats and, when I walked by, they would come over to say hello – very lively and curious. I love waking up to the crow of roosters (had that experience for years) but I do not think I would enjoy taking care of chickens. I would also have a fruit orchard and, of course, grow vegetable and herbs. My home would be as self-sustaining as possible (solar panels, etc.). Anyway, I am in this life dealing with its demands … no gentlewoman’s farm for me!
I’m also going to start eating more beans – lentils because they’re protein rich and cook quickly and chickpeas because they’re one of the healthiest beans around in terms of vitamins/minerals and I can use them to make hummus which I love. I’ve looked at some recipes this morning and they’re all too complex – too many ingredients – I just want to keep a few things on hand in the pantry so I can quickly put something together. So, I’ve decided on these staples: lentils, potatoes, shallots, garlic, broth, and I’m going to try pimientos. Bland I know but I don’t really care.
We’ll see … right now I’m cooking some beans (a bag of 16 beans) – I’ll make a stew with them and some potatoes later today.
